You heard the woman, put that spotty banana and tired sweet potato to good use:
Sweet Potato Snackin’ Bread
Ingredients
1 medium sweet potato, roasted
1 small ripe banana
3 eggs
1/3 cup natural almond butter
1 tsp vanilla essence
2 Tbsp maple syrup
½ cup coconut flour
2 Tbsp flax meal
1 tsp baking powder
A generous sprinkle of cinnamon and cardamom
A pinch of pink salt
Sugar-free chocolate for topping
Steps
1. Preheat your oven to 180ºC.
2. In a large mixing bowl, mash the roasted sweet potato and banana with a fork.
3. Add the eggs, almond butter, vanilla essence and maple syrup – and mix again.
4. Add the rest of the ingredients and combine everything with a whisk.
5. Pour the batter into a lightly greased loaf pan and bake for 45 min or until a knife comes out clean.
