For some, Heritage Day wouldn’t be Heritage Day without a choppie and a doppie. For others, it merely means standing around a smoky braai “chewing the fat” for hours before chewing anything, which is usually raw chicken and burnt boerie.

If you fear that you’re going to be dragged to one of these dreaded occasions, make sure you drag these low-carb pumpkin fritters along, the other guests will thank you for it.

Lekker Local Low-carb Pumpkin Fritters

Ingredients

300g pumpkin, peeled and cut into chunks

1 tsp ground cinnamon

1tbsp Xylitol

1 egg

80ml coconut flour

2 tbsp coconut oil

For the cinnamon ‘sugar’

5ml ground cinnamon

45ml Xylitol

Method

Steam the pumpkin in a little salted water until soft. Drain, mash and cool.

Combine the mashed pumpkin, cinnamon, Xylitol, egg and coconut flour. Season.

Heat the butter on medium, add 15ml pumpkin mixture to the pan and fry for 2 minutes on each side or until golden brown. Repeat with the remaining batter in batches of 4.

For the cinnamon ‘sugar’, combine the ingredients and sprinkle over the fritters.
