This dressing goes great with avocado salad, but it could also add flair to a salmon, chicken or rice dish. Add chopped chilli or red pepper flakes if you like it spicy.

Carrot-Ginger Dressing

Ingredients

2 medium carrots, peeled and thinly sliced

1 3cm piece ginger, peeled and thinly sliced

ó large garlic clove

1 tbsp seasoned rice vinegar

1 tbsp white miso

2 tbsp fresh lemon juice

2 tbsp soy sauce

2 tbsp toasted sesame oil

ó tsp kosher salt

1 tbsp mayonnaise

What to do

Purée carrots, ginger, garlic, vinegar, miso, lemon juice, soy sauce, sesame oil, salt, and ½ cup water in a blender on high speed until solids are very finely chopped, about 30 seconds (mixture will look grainy and watery, but that’s okay). Add mayo and blend on low speed until smooth and creamy.
